Zucchini Pasta with Anchovies

Ingredients

  • 500 g whole wheat spaghetti
  • Salt
  • 1 onion
  • 2 tbsp olive oil
  • 5 anchovy fillets
  • 1 Zucchini
  • 1 tsp organic lemon zest
  • a handful fresh chopped parsley
  • Pepper

Instructions

    Cook the pasta according to package instructions in plenty of boiling salted water until al dente, then drain and set aside.

    Peel and halve the onion, slice into strips. In a hot pan with olive oil, sauté for about 5 minutes until lightly golden brown, stirring occasionally. Pat the anchovy fillets dry and cut them into strips as well. Roughly grate the zucchini. Add the grated zucchini and anchovy strips to the onions and cook together for 1–2 minutes.

    Finally, fold in the lemon zest, parsley, and drained pasta, seasoning with salt and pepper to taste. Serve in deep bowls or plates.
