Ingredients
- 500 g young spinach
- 1 Shallot
- 2 Garlic cloves
- 1 red chili pepper
- 400 g spaghetti
- Salt
- 4 tbsp olive oil
- Pepper
- 50 g Parmesan (1 piece)

Wash, rinse, drain the spinach and set aside a few nice leaves for garnish. Peel and finely chop the shallot and garlic. Wash the chili, deseed it and slice into very thin strips. Cook the spaghetti in plenty of salted water until al dente.

Sauté the shallot and garlic in oil until translucent, add the chili, season with salt and pepper. Set aside some spinach leaves, then add the remaining spinach and cook over high heat while stirring occasionally until wilted. Taste the spinach. Drain the noodles, place on a plate, top with the cooked spinach, garnish with reserved spinach leaves and freshly grated parmesan.
