Zucchini Flatbread

Zucchini-Fladen von Spoonsparrow – a delicious & green zucchini recipe for any occasion. Whether as a snack at a party or as an alternative to pizza.

Ingredients

  • 350 g puff pastry (frozen or fresh)
  • 300 g green zucchini
  • 300 g yellow zucchini
  • 150 g low-fat quark cheese
  • 150 g Sour cream
  • 1 egg yolk
  • Salt
  • Pepper
  • 1 tsp Olive oil
  • 1 sprig basil

Instructions

    Thaw the puff pastry if necessary.

    Clean, wash, and julienne the zucchini lengthwise into thin slices.

    Mix quark with sour cream and egg yolk, and season with salt and pepper.

    Place the puff pastry on a baking sheet lined with parchment paper. Spread with the quark mixture, top with zucchini slices, and drizzle with olive oil.

    Bake in a preheated oven at 200 °C (180 °C convection; Gas: Mark 3) for about 25 minutes. While baking, wash, dry shake, and pluck basil leaves. Remove the flatbread from the oven, top with basil leaves, and serve immediately.
