Ingredients

  • 17.63 oz beef brisket
  • 2 stalks lemongrass
  • 2 cloves garlic
  • 2 onions
  • 4 tbsp soy sauce
  • 5 tbsp fish sauce
  • 2 tbsp Lime juice
  • 3 tbsp liquid honey (1.7 oz)
  • 0.2 oz pepper
  • 2 tbsp durum wheat flour type 1050 (1.7 oz)
  • 4 tbsp sesame oil
  • 4 Scallions
  • 2 carrots
  • 0.7 oz cucumber
  • 4 lettuce leaves (e.g. butter lettuce)
  • 2 handfuls fresh bean sprouts (7 oz)
  • 4 stalks coriander
  • 2 tbsp roasted peanuts (5.7 oz; unsalted)
  • 14 oz rice noodles
  • 2 tbsp rice vinegar
  • Salt
  • optional: chili sauce

Instructions

  1. 1.

    Rinse the beef, pat dry and slice very thinly. Clean lemongrass, wash, remove tough outer leaves, and finely slice the inside into rings. Peel garlic and onions. Finely dice garlic and slice 1 onion into wedges.

    For the marinade, mix 2 tbsp soy sauce with 1 tbsp fish sauce, 1 tbsp lime juice, 1 tbsp honey, pepper, lemongrass, and garlic. Add the beef with onion wedges to the marinade and let it marinate for at least 20 minutes.

    Meanwhile, finely chop the remaining onion and coat it in flour. Heat 2 tbsp oil in a pan, add the onion and fry until golden brown in 5 minutes. Remove fried onions from the pan, drain on kitchen towel and set aside.

    Clean and wash spring onions, carrots and cucumber; slice spring onions into rings, carrots and cucumber into thin sticks. Wash lettuce leaves, spin dry and cut into thin strips. Wash bean sprouts and drain in a sieve. Wash coriander, shake dry and pluck leaves. Roughly chop peanuts.

    Soak rice noodles in hot water according to package instructions or cook briefly. Meanwhile, for the sauce, mix 2 tbsp soy sauce, 4 tbsp fish sauce, 1 tbsp lime juice, 2 tbsp honey, 1 tbsp sesame oil, 2 tbsp rice vinegar and 2 tbsp water. Heat remaining oil in a pan, add beef with marinade and fry for about 5 minutes.

    Place rice noodles in 4 bowls, arrange with spring onions, carrots, cucumber, lettuce leaves, bean sprouts and beef. Drizzle with sauce and top with fried onions, peanuts and coriander leaves. Serve chili sauce with Bun Bo Nam Bo if desired.
