Zucchini-Feta Pockets

Ingredients

  • 4 sheets of filo dough
  • 400 g zucchini
  • 200 g sheep cheese (feta)
  • 1 Shallot
  • 2 tbsp chopped parsley
  • 1 tbsp Olive Oil
  • Salt
  • 2 tbsp liquid butter
  • black pepper (freshly ground)
  • oil for frying

Instructions

    Cut the filo dough into strips about 6 cm tall and 20 cm long.

    Wash, dry, and grate the zucchini. Sauté with the chopped shallot and garlic in oil, stirring for 2 minutes to reduce moisture. Season with salt and pepper, then strain through a sieve and let drain. Grate the sheep cheese and mix into the vegetable mixture.
