Savory Filo Tartlets with Artichoke Cream and Smoked Salmon

Ingredients
- 200 g filo dough
- olive oil
- 200 g marinated artichoke hearts
- 1 Garlic clove
- 1 tsp fresh thyme
- 1 tbsp Olive Oil
- Lemon juice
- Salt
- pepper (ground)
- a handful watercress
- 150 g Smoked salmon
- 4 capers

Preheat the oven to 180°C fan-forced. Lightly oil fireproof ramekins (about 8 cm diameter) or muffin tins.

Cut the filo dough into approximately 15x15 cm squares. Layer three sheets, slightly offset and overlapping, in the ramekins. Brush each layer with a little olive oil. Bake in the oven for about 15 minutes until golden brown. Remove from the oven, carefully lift out of the molds, and let cool.

For the cream, drain the artichokes well and blend them with peeled garlic, thyme, and olive oil in a blender to a fine puree. Season with lemon juice, salt, and pepper. Before serving, wash the watercress, pat dry, and place it in the filo shells. Spread the cream on top and arrange the smoked salmon. Garnish with capers and sprinkle with pepper.
