Zucchini Cream Soup with Thyme

- 1 large onion
- 2 large zucchinis
- 200 g starchy potatoes
- 1 tbsp Olive Oil
- 600 ml Vegetable Broth
- 5 stems thyme (with flowers)
- 120 ml heavy cream
- Salt
- ground pepper

Peel and dice the onion. Wash, trim, and roughly cube the zucchini. Peel, wash, and cube the potatoes. Heat the oil in a large pot and sauté the onions with the potatoes. Add the broth and simmer gently for about 15 minutes. Rinse the thyme, shake off excess moisture, and pluck the leaves; set aside the flowers and a few leaves for garnish. Add the zucchini and thyme to the soup and cook until tender, about 5-10 more minutes. Stir in the cream (leave 2 tbsp) and blend with an immersion blender until smooth. If desired, add more broth or reduce further for consistency.
