Clear Vegetable Soup with Cabbage
The clear vegetable soup with cabbage, tomatoes, bell pepper and carrots is quick to make and a light pleasure. Chives refine the dish!
Ingredients
- 400 g cabbage
- 2 carrots
- 1 green bell pepper
- 2 stalks celery
- 2 Spring Onions
- 800 ml vegetable stock
- 200 g diced tomatoes
- Salt
- ground pepper
- 2 tbsp chive curls

Wash, trim, remove the core from the cabbage and cut into strips.

Peel the carrots and slice them diagonally.

Wash the bell pepper, halve it, deseed and dice it.

Wash, trim the celery and slice it diagonally into thin slices.

Wash the spring onions, trim them and cut into about 2 cm pieces.

Bring the vegetable stock to a boil and add all the vegetables. Simmer for about 20 minutes and season with salt and pepper at the end. Serve sprinkled with chives.

This "magical" base soup can be adapted in various ways as desired. For example, Mediterranean with different chopped herbs, minced garlic and a few drops of olive oil or hearty with one bay leaf, four juniper berries and a pinch of ground caraway.
