Ingredients

  • 4 medium zucchini
  • 2 Garlic cloves
  • Salt
  • Pepper (freshly ground)
  • olive oil (for frying)
  • 1 bunch chives (or other fresh herbs)
  • 1 Red Onion
  • 1 tsp pickled green peppercorns
  • 200 g goat cream cheese
  • toothpicks (for securing)

Instructions

    Wash, trim and slice the zucchini lengthwise into ½ cm thick slices. Peel the garlic.

    Heat plenty of oil in a pan and fry the zucchini portions lightly golden brown on both sides, season with salt and pepper, and press the garlic over them. Fry only briefly, remove from the pan onto kitchen paper to drain excess oil, and let cool.

    Wash the chives, shake dry and cut into small ribbons. Peel and finely dice the onion. Crush the peppercorns with a fork. Mix everything together and combine half of it with goat cream cheese.

    Form 20 balls from the cheese and roll them in the remaining chive–onion mixture. Wrap each zucchini slice around one cheese ball and secure with toothpicks. Serve with toasted white bread.
