Goat Cheese Bites

Ingredients
- 9 slices of black bread
- olive oil (for frying)
- 24 small goat cream cheeses
- 300 g green beans
- 3 tbsp olive oil
- 3 tbsp Lemon juice
- Salt
- 1 pear
- 1 tsp Honey
- A handful of salad (arugula and yellow dandelion)
- 4 large leaves of radicchio

Quarter the black bread slices, cutting each into triangles. Fry them in a hot pan with a few drops of oil until lightly browned. Remove from the pan and let cool. Stack three triangles with two small goat cream cheeses on top to form towers.

Wash, trim, and cut the beans into small pieces. Briefly sauté them in 1 tbsp oil in a hot pot. Deglaze with water, add 2 tbsp lemon juice and a little more water, season with salt, cover and steam for 3-4 minutes until tender. Wash the pear, quarter it, remove the core, and dice the quarters. Toss the diced pears into the beans and finish with honey.

Wash, trim, dry, and tear the salad into small pieces. Wash and dry the radicchio.

Place a leaf of radicchio in the center of each plate as a bowl. Fill it with the salad and drizzle with the remaining oil and lemon juice. Add the cheese towers on top and serve with the pear‑bean mixture.

Garnish with pear chips if desired.
