Vegetarian Terrine with Potatoes, Carrots and Green Beans

- 500 g waxy potatoes
- Salt
- 350 g carrots
- 350 g green beans
- 7 eggs
- 120 ml milk
- 3 tbsp freshly grated Parmesan cheese
- Salt
- Pepper (freshly ground)

Instructions

Wash the potatoes and cook in boiling salted water for about 20 minutes. Drain, rinse with cold water and peel. Slice when cooled. Peel the carrots, slice them as well and blanch in boiling salted water for about 3 minutes. Drain, rinse with cold water and let drain thoroughly. Wash the beans, trim and blanch in boiling salted water for 7 minutes. Rinse and drain well.

Whisk the eggs with milk and cheese, season with salt, pepper and nutmeg.

Preheat the oven to 200°C (392°F) fan‑fry.

Line the bottom of a greased loaf tin with potato slices and top with half of the carrot slices and beans. Cover with a little egg mixture and repeat the layering. Finish with the remaining potato slices, pour over the rest of the egg mixture and bake in the preheated oven for 35–40 minutes.

Sprinkle with thyme leaves before serving.
