Zoodle Salad with Smoked Tofu and Tahini Sauce

- 3 zucchini
- 1 red bell pepper
- 4 sprigs Parsley
- 3 tbsp Rapeseed oil
- 2 tbsp white wine vinegar
- 1 tbsp agave syrup
- 2 tbsp lemon juice
- Salt
- Pepper
- 400 g smoked tofu
- 2 tbsp Soy sauce
- 1 Garlic clove
- 3 tbsp tahini (15 g; sesame paste)
- 100 g soy yogurt
- 2 tbsp sesame seeds (15 g)

Clean, wash, and dry zucchini, bell pepper, and parsley. Spiralize zucchini into fine long strands. Halve the bell pepper, remove seeds, and cut into strips. Strip parsley leaves and cut into strips.

In a bowl, combine zucchini noodles with 2 tbsp oil, vinegar, agave syrup, 1 tbsp lemon juice, salt, and pepper; let sit to absorb flavors.

Cube tofu. Heat remaining oil in a pan over medium heat. Fry tofu for about 5 minutes until golden brown, then season with soy sauce.

Peel and finely chop garlic. Whisk tahini, soy yogurt, remaining lemon juice, and garlic together; season with salt and pepper. Transfer the tahini sauce to a small bowl.

Mix half of the parsley into the zucchini noodles, then plate with tofu and bell pepper strips; sprinkle remaining parsley on top. Serve with tahini sauce and garnish everything with sesame seeds.
