Lemon Chicken with Shallots

Ingredients

  • 1.2 kg chicken (1 whole chicken)
  • lemons
  • 6 tbsp Olive oil
  • Salt
  • Pepper
  • 125 g shallots
  • 2 carrots
  • 2 stalks celery
  • 1 bunch Basil
  • 100 ml chicken stock
  • 1 untreated lemon

Instructions

    Rinse the chicken, pat dry and cut into 4 portions. Mix juice of ½ lemon, 2 tbsp olive oil, salt and pepper. Rub the mixture vigorously onto the chicken pieces. Place the chicken in a shallow roasting pan (or on the oven tray).

    Peel the shallots and cut into strips. Peel the carrots and cut into sticks. Clean the celery, rinse and slice thinly. Rinse the basil (reserve some for serving), shake dry and pluck the leaves from the stems. Distribute the vegetables with half of the basil leaves around the chicken pieces. Season with salt and pepper.

    Pour remaining lemon juice, the rest of the olive oil and the chicken stock over them. Slice the untreated lemon thinly and add to the pan. Bake in a preheated oven at 200°C (gas: level 3-4, fan: 180°C) for about 40 minutes, basting the chicken pieces with the roasting liquid repeatedly. Garnish with basil leaves before serving.
