Zitronenschnitten

Ingredients
- 150 g soft butter
- 200 g sugar
- 1 Tbsp vanilla sugar
- 1 pinch salt
- 6 Eggs
- 200 g Flour
- 50 g starch
- 2 tsp Baking powder
- 3 unspritzed lemons
- 100 g dark couverture chocolate
- 150 g powdered sugar

Separate the eggs. Whisk the butter until fluffy. Then gradually add sugar, vanilla sugar, salt and the yolks. Rinse two lemons with warm water. Grate the zest and squeeze the juice. Add both to the butter-sugar mixture. Mix flour with starch and baking powder, sift over the butter mixture and fold in gently. Whisk egg whites until stiff; set aside 1 tsp, fold the rest into the batter.

Preheat the oven to 200°C. Grease a baking sheet well with butter. To keep the dough from spreading, seal the open end of the sheet with a double-folded strip of foil.

Spread the batter onto the sheet and smooth it out. Bake on the middle rack for about 25 minutes.

Squeeze the juice of the third lemon. Mix 2 tbsp juice and the reserved egg white with powdered sugar. Melt chopped couverture in a double boiler, let cool slightly. Using a piping bag with a small tip, pipe lemon glaze on one half of the cake and chocolate lines on the other. Let the cake cool and cut into pieces for serving.
