Ingredients

  • 250 g sugar
  • 3 egg whites
  • 2 tsp lemon juice
  • 400 g ground almonds
  • 3 tsp cinnamon
  • sugar (for rolling)
  • 150 g powdered sugar
  • 2 tbsp lemon juice

Instructions

    Beat the egg whites very stiff and gradually add the sugar. Stir in the lemon juice and continue beating with a hand mixer until the sugar has dissolved. Mix the almonds with the cinnamon and fold into the meringue until a pliable dough forms. Cover and refrigerate for 1 hour.

    Roll the dough to about 5 mm thickness on a sugared surface, cut out star and comet shapes, and place them on a parchment-lined baking sheet. (Dip each shape in powdered sugar each time so it doesn't stick, knead any leftover dough together and roll again.) Bake the cinnamon stars at 180°C for about 12 minutes.

    Whisk powdered sugar with lemon juice until thick and brush the cinnamon stars with this glaze; let them dry.
