Zimmes

Ingredients
- 200 g kosher ground beef
- 1 onion
- 1 egg
- 2 tbsp matzo meal
- Salt
- pepper (ground)
- 4 small green bell peppers
- 6 shallots
- 4 Garlic cloves
- 250 g dried plums
- 100 g raisins
- 2 white vegetable onions
- 3 tbsp butter
- 1 cup water
- 0.5 tsp Salt
- 2 tbsp sugar
- freshly grated nutmeg

Soak plums and raisins in hot water for 20 minutes. Peel and finely chop the onion. Knead the ground beef with onion, egg, matzo meal, salt, and pepper. Wash the bell peppers, cut off a lid and deseed them. Peel and quarter the vegetable onions.

Fill the bell peppers with the meat mixture. In a shallow pot add the filled peppers, plums, whole unpeeled shallots, garlic cloves, vegetable onions, butter cubes, and water. Sprinkle salt, sugar, and nutmeg over the top. Cover and simmer on low heat for about 1 hour.

If necessary, add 1-2 tbsp of water repeatedly if the stew reduces too early. Just before the end of cooking remove the lid and allow the stew to thicken properly. The stew must never be too thin (soupy).
