Ingredients

  • 4 egg yolks
  • 100 g sugar
  • 200 ml Marsala (Italian liqueur wine)
  • cocoa powder

Instructions

    Whisk the egg yolks with the sugar in a stainless steel bowl until frothy and add the wine.

    Place the bowl in a hot water bath and beat the cream with an electric mixer until thick and foamy, then chill it in a cold water bath.

    Serve by spooning into small bowls and dust with cocoa powder as desired.
