Lemon Ice Cream with Melon Salad

Ingredients

  • 500 ml Buttermilk
  • 60 g sugar
  • 1 lemon (juiced)
  • 200 ml whipping cream
  • 0.5 honeydew melon
  • 0.5 cantaloupe melon
  • lemon leaf

Instructions

    Add the sugar together with the lemon juice and 3 tbsp water to a pot, bring to a syrup and let cool.

    Mix the buttermilk with the syrup, stir in the cream, then pour everything into an ice cream maker in two batches and churn.

    Alternatively, pour into a large shallow bowl, place in the freezer and stir vigorously every half hour for 3 hours.

    Then fill a rectangular container lined with plastic wrap, smooth it out, and freeze for another 2 hours.

    In the meantime, use a Parisienne (spherical cutter) to cut small melon balls.

    Scoop the finished ice cream onto a plate, remove the plastic wrap, and serve garnished with melon balls and lemon leaves.
