Ingredients
- 2 Eggs
- 1 pinch salt
- 150 g flour
- 300 ml milk
- 4 tbsp pork lard
- 8 small soufflé cups
- 100 g crème fraîche
- roast beef
- 1 spring onion (finely sliced)

Whisk eggs, salt, flour and milk with an electric hand mixer until smooth and let rest briefly.

Oil the cups with pork lard and preheat in a hot oven at 250°C.

Remove the cups from the oven, stir the batter quickly and pour it thinly into the cups. Bake in the hot oven for about 12 minutes until risen and crisp; do not open the oven during baking. Then remove and let cool slightly.

Take the Yorkshire puddings out of the cups and allow to cool. For serving place a small dollop of crème fraîche on each, top with a slice of roast beef, and sprinkle spring onion rings.
