Fried Sea Bass

Ingredients
- 2 Zucchini
- 1 Papaya
- 2 shallots
- 1 walnut-sized piece ginger
- 2 tbsp butter
- unprocessed lemon zest
- 2 limes (juice)
- Salt
- white pepper from the mill
- 2 tsp maple syrup
- 200 g skinless sea bass fillets (4 pieces each) or cod fillet as substitute
- 2 tbsp oil (for frying)
- 1 tbsp chervil leaf
Instructions

Wash, trim and cut zucchini into bite-sized pieces. Halve the papaya, remove seeds and peel the halves. Cut papaya into strips. Peel and dice shallots. Peel ginger and slice into strips.

Heat 1 tbsp butter and sear zucchini around. Add papaya, shallots, lemon zest and ginger strips; sauté briefly.

Add lime juice and season with salt, pepper and maple syrup. Rinse sea bass, pat dry and cut fillets from the central spine.

Heat oil and add remaining butter. Fry fish for about 5 minutes total. Plate with zucchini-papaya vegetables and sprinkle chervil leaves. Serve with a wild rice-long grain mix.
