The yogurt ice cream with lime juice from Spoonsparrow sweetens your lukewarm summer evening!

Ingredients

  • 1 Vanilla bean
  • 750 g yogurt (3.5% fat)
  • 40 g birch sugar (2 tbsp)
  • 0.5 organic lime
  • 1 sheet white gelatin

Instructions

    Slice the vanilla bean lengthwise and scrape out the seeds.

    Add vanilla seeds and yogurt to a bowl, then stir in birch sugar until dissolved.

    Rinse the lime hot, dry it, and squeeze 1 tbsp of juice. Optionally cut thin strips of zest for garnish.

    Soak gelatin in cold water.

  5. 5.

    Warm lime juice in a small pot, squeeze out excess water from gelatin and dissolve into the juice while stirring.

    Stir gelatin mixture with 3 tbsp yogurt, then fold into remaining yogurt. Freeze in an ice cream maker until set, then chill until serving. Garnish with lime zest as desired.
