Ingredients

  • 200 g Raspberries
  • 500 g soy yogurt alternative (or coconut)
  • 6 g Chia Seeds (2 tsp)
  • 2 sprigs lemon thyme

Instructions

    Wash the raspberries and mash them with a fork into a puree. Mix in the yogurt alternative and chia seeds, then refrigerate for about 2 hours to allow the mixture to thicken.

    Meanwhile wash the thyme, pat dry, and pluck the leaves off the stems. Combine the thyme with the mixture and pour into 8 popsicle molds. Freeze for about 1 hour, then insert sticks and freeze for another 2 hours until firm. Release from molds before serving.
