Yogurt Basil Lassi with Squid

A refreshing yogurt basil lassi featuring fresh ingredients and tender squid, perfect for a light meal.

Ingredients

  • 300 g yogurt
  • 100 ml milk
  • 2 Handfuls Basil
  • Salt
  • 1 tsp lemon juice
  • a pinch ground coriander
  • 50 g carrots
  • 1 small tomato
  • 100 g small squid
  • 1 tbsp plant oil
  • 1 tsp Madras curry powder
  • 2 Tbsp whipping cream
  • pepper (ground)

Instructions

    Combine yogurt and milk in a blender. Rinse the basil, shake dry, and add to the mixture. Blend until smooth, adding cold water if needed. Optionally strain through a sieve and season with salt, lemon juice, and coriander.

    Peel and dice the carrot. Blanch the tomato in boiling water, peel, remove seeds and stem, then dice finely. Wash and pat dry the squid.

    Heat oil in a pan and sauté the carrot and tomato for 1-2 minutes. Add the squid, sprinkle with curry powder, and cook another 1-2 minutes while stirring. Pour in cream and season with salt and pepper.

    Whisk the lassi again until frothy and pour into small glasses with lids. Arrange the cooked squid on top of each lid and serve.
