Ingredients

  • 750 g yellow tomatoes
  • 1 Shallot
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 700 ml vegetable broth
  • Salt
  • pepper (ground)
  • a pinch sugar
  • 2 tbsp gin (optional)
  • 100 ml heavy cream (at least 30% fat)
  • 1 bunch chives
  • paprika powder (for garnish)

Instructions

    Boil the tomatoes, peel, seed and chop them. Peel and finely chop the shallot and garlic, then sauté in olive oil until translucent. Add the tomatoes and cook briefly. Stir in basil and broth, cover and simmer for about 20 minutes, then puree finely and season with salt, pepper and sugar.

    Fold in gin if desired and taste. Lightly whip the cream. Wash, dry and cut the chives into rings. Ladle the soup into four bowls, pour the whipped cream over it, and sprinkle with chives and paprika powder before serving.
