Ingredients

  • 500 g blood sausage
  • 5 onions
  • 5 tbsp apple cider vinegar
  • 2 tbsp mustard (medium sharp)
  • 4 tbsp rapeseed oil
  • 4 tbsp water
  • Salt
  • Pepper
  • 2 tsp mustard seeds (slightly crushed)

    Slice the blood sausage into rounds, peel the onions and cut them into thin rings. If you prefer milder onions, briefly rinse them with boiling water.

    In a bowl whisk together all dressing ingredients, season, add the onions, let stand for about 30 minutes, then arrange the blood sausage on a plate and pour the onion vinaigrette over it. Let rest another 15 minutes, sprinkle some pepper on top, and serve.
