Wok Vegetable Noodles

Stir-fried noodles with fresh vegetables and shrimp, a quick and flavorful dish from the dough category.

Ingredients

  • 500 g pak choi
  • Salz
  • 500 g Shrimp (pre‑cooked, peeled and deveined)
  • 400 g soba noodles
  • 2 tbsp Vegetable oil
  • 2 cm fresh ginger
  • soy sauce
  • lime juice
  • Sambal oelek

Instructions

    Wash and trim the Pak Choi, blanch the dark green parts in boiling salted water for about 3 minutes. Remove, shock in cold water, drain well, and slice the greens into fine strips.

    Rinse and pat dry the shrimp. Cook the noodles in boiling salted water until al dente, then drain, shock in cold water, and drain again.

    Heat 2 tbsp oil in a wok and sauté the vegetables. Peel and grate the ginger, add it with the shrimp, and stir-fry for 2 minutes. Add the noodles and Pak Choi greens, toss briefly, and season with soy sauce, lime juice, and sambal oelek. Serve immediately.
