Ingredients

  • 150 g dry adzuki beans
  • 0.5 l vegetable broth
  • 300 g celery
  • 2 onions
  • 1 apple
  • 2 EL oil
  • 2 EL sour cream
  • Salt
  • pepper (from the mill)
  • apple cider vinegar
  • 2 EL chopped walnut kernels

    Soak the beans overnight. Then drain and bring with the vegetable broth to a boil. Simmer covered for about 1.5 hours until tender. If any liquid remains in the pot, discard it.

    Peel the celery, onions, and apple. Dice the celery, slice the onions into rings, quarter the apple, core it, and dice it as well. Sauté the onion rings with the celery in hot oil for about 5 minutes until translucent. Then stir in the apple cubes, sour cream, beans, and walnuts. Season with salt, pepper, and apple cider vinegar before serving.
