Wok Noodles with Vegetables

Ingredients

  • 300 g Chinese mie noodles
  • Salt
  • Pepper (freshly ground)
  • 1 kg leeks
  • 2 shallots
  • 1 Garlic clove
  • 1 tbsp chopped chives
  • 4 tbsp oil
  • 2 tbsp Soy sauce
  • 1 tbsp walnut oil
  • 100 g chopped walnuts

Instructions

    Cook the noodles in plenty of boiling salted water until al dente, then drain and set aside.

    Wash and trim the leeks; slice the white and light green parts into thin rings. Peel and dice the shallots and garlic. Sauté the shallots, garlic, and leeks in hot oil for 3 minutes. Add the drained noodles and stir‑fry for 5 minutes. Season with soy sauce, salt, pepper, and walnut oil, then fold in the chives.

    Serve the noodles in bowls, sprinkled with walnuts.
