Wirsing Noodles

Ingredients

  • 500 g whole wheat spaghetti
  • Salt
  • 500 g savoy cabbage
  • 2 cloves garlic
  • 75 g walnuts
  • 4 tbsp olive oil
  • 1 tbsp walnut oil
  • a splash of lemon juice
  • Pepper
  • 30 g parmesan (1 piece)

Instructions

    Cook the spaghetti in salted water until al dente according to package instructions. Drain and reserve some pasta water.

    Meanwhile, wash, trim, and cut the savoy cabbage into strips. Blanch in boiling salted water for about 4–5 minutes until tender yet firm. Drain and rinse with cold water.

    For the walnut pesto, peel the garlic. Roughly chop the walnuts and combine them with the garlic and both oils in a blender, adding a splash of reserved pasta water to create a creamy sauce. Season with salt, lemon juice, and pepper.

    Grate the Parmesan. Toss the cooked spaghetti and blanched cabbage with half the Parmesan and the walnut pesto, then plate. Sprinkle the remaining Parmesan on top.
