Wine Foam Soup with Baked Beans

Ingredients

  • 500 ml chicken broth
  • 500 ml sparkling wine
  • 1 Shallot
  • 3 tbsp butter
  • 1 tbsp flour
  • 250 ml Whipping Cream
  • 50 g grated Parmesan
  • 2 egg yolks
  • Salt
  • pepper (from grinder)
  • 100 g baked beans
  • 2 tbsp chervil (chopped)

Instructions

    Peel and finely chop the shallot, sauté in 1 tbsp butter until translucent, add broth and wine, reduce by half.

    Knead flour with 1 tbsp butter, whisk into soup for about 5 minutes. Add cream and parmesan, bring to a boil, remove from heat, fold in beaten egg yolks, season with salt and pepper.

    Serve the soup in bowls, topped with baked beans and chervil.
