Ingredients
- 250 g dried white beans
- 1 l vegetable broth (or meat broth)
- 2 fresh bay leaves
- 2 Garlic cloves
- 2 onions
- 200 g celery root
- 150 g chorizo
- 1 tbsp Lemon Juice
- Salt
- pepper (from grinder)
Instructions

Soak the beans overnight in water. The next day drain and add them to a pot with vegetable broth, bay leaves, and peeled garlic cloves. Peel, dice, and add onions and celery root to the pot. Bring the soup to a boil, then cover and simmer gently for about 1.5 hours until the beans are tender, stirring occasionally. Add more broth if needed.

Slice the chorizo into thin rounds and slowly crisp them in a hot pan.

Puree the soup finely, season with lemon juice, salt, and pepper, and ladle into bowls. Top with the crispy chorizo and drizzle with the rendered fat.
