Wine Bite Gingerbread

Ingredients
- 100 g sugar (fine crystals)
- 100 g honey
- 60 g room temperature butter
- 1 tbsp heavy cream
- 1 organic lemon (zest and juice)
- 1 Tbsp vanilla sugar
- 2 Eggs
- a pinch salt
- 1 tsp gingerbread spice mix
- 300 g flour
- 0.5 tsp Baking soda
- flour for dusting
- 1 egg white for brushing
- 1 tsp lemon juice
- 200 g powdered sugar

For the dough, mix the sugar with honey, butter, cream, lemon zest and juice, and vanilla sugar; bring to a boil while stirring, then let cool.

Beat the eggs with the spices over a hot water bath until frothy, then gradually fold in the cooled honey-sugar mixture until a nice froth forms.

Mix the flour with baking soda and knead into the batter. Wrap the dough in cling film and refrigerate overnight.

The next day preheat the oven to 180°C (350°F) fan‑fry. Knead the dough again, roll it out on lightly floured surface to about 5 mm thickness, cut into equal rectangles (≈3×8 cm). Place the pieces on two parchment‑lined trays and bake in the hot oven for about 10 minutes each until light brown. Remove and cool on a rack.

For the glaze, mix all ingredients well. Brush the cooled wine bites with it and let dry.
