Coconut Ginger Lebkuchen Squares

Ingredients
- 250 g honey
- 125 g butter
- 150 g sugar
- 500 g flour
- 1 packet baking powder
- 100 g Ground Almonds
- 1 tsp cinnamon
- 1 pinch cloves powder
- 1 pinch allspice
- 1 pinch salt
- 2 Eggs
- 50 ml whipping cream (at least 30% fat)
- 150 g mascarpone
- 3 tbsp powdered sugar
- 40 ml coconut liqueur
- 3 tbsp Lemon juice
- 150 g coconut flakes

Preheat the oven to 180°C with top and bottom heat. Boil butter, honey, and sugar while stirring, then let cool. Mix flour with baking powder, ground almonds, spices, and eggs using a hand mixer’s dough hooks. Add the honey mixture and knead into a smooth dough (if too soft, add a little more flour). Cover and refrigerate for about 1 hour.

Press the dough onto a greased baking sheet and smooth it out. Bake in the preheated oven for 35 minutes until golden brown. Remove, cut into small squares (3 cm sides), and cool on a wire rack. Whip the cream to stiff peaks. Mix mascarpone with sugar and liqueur until smooth, then fold in the whipped cream gradually. Spread half of the squares thinly with the cream and place one square on top of each. Brush the cubes with lemon juice and roll them in coconut flakes. Let dry and serve.
