Wild Rice Mushroom Salad

The wild rice mushroom salad is full of folate. This simple and tasty way fills your folate stores.

Ingredients

  • 300 g wild rice
  • 1 onion
  • 300 g mixed mushrooms (wild mushrooms)
  • 1 bunch chives
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 2 tbsp balsamic vinegar

Instructions

    Cook the rice according to package instructions. Peel and dice the onion. Clean the mushrooms and slice them; leave some whole. Wash the chives, shake dry, and cut into rings.

    Heat the oil in a pan and briefly sauté the onions. Add the sliced and whole mushrooms, stirring, and cook for 2-3 minutes until browned.

    Remove from heat, season with salt and pepper, and stir in balsamic vinegar. Drain the rice and pour it over the mushrooms. Add chives and mix well; adjust seasoning if needed. Serve warm.
