Tomatoes Stuffed with Rice and Ground Meat for the Thermomix®

Try the delicious tomatoes stuffed with rice and ground meat for the Thermomix from Spoonsparrow or one of our other healthy recipes.

Ingredients

  • 800 g beef tomato (4 beef tomatoes)
  • 1 Shallot
  • 1 Garlic clove
  • 10 g Thyme (0.5 bunch)
  • 15 g Butter (1 tbsp)
  • 1 bay leaf
  • 100 g long grain rice
  • 150 g ground beef
  • 200 ml meat broth
  • Salt
  • Pepper
  • 50 g Gruyère cheese (1 block)
  • 20 g Sour cream (1 tbsp)
  • 2 tbsp olive oil
  • 2 sprigs parsley

Instructions

    Wash and dry thyme, then shake off excess moisture. Peel garlic and shallot. Put everything in the mixing bowl and chop multiple times for 4 s on level 5. Then use the spatula to return all ingredients to the mixing bowl.

    Add butter and bay leaf and sauté for 3 min at 120 °C on level 0.5.

    Meanwhile wash tomatoes, pat dry, cut off a lid from each and set aside. Carefully hollow out tomatoes, put the pulp into the mixing bowl and chop for 3 s on level 4.

    Pour meat broth into the mixing bowl and simmer for 10 min at 90 °C on level 1; gradually add rice through the lid opening and then ground beef. Reinsert measuring cup.

    Grate cheese in the meantime. After about 5 min, pour sour cream through the lid opening into the mixing bowl. Season with salt and pepper.

    Fill tomatoes with the rice‑ground meat mixture and place lids on top.

    Brush a baking dish with 1 tsp oil and put tomatoes inside. Spread remaining mixture around the tomatoes, season, drizzle with extra oil and bake in preheated oven at 200 °C (convection 180 °C; gas: level 3) on middle rack for about 25 min.

    Meanwhile wash parsley, shake dry and chop. Sprinkle over tomatoes.
