Wild Herb Salad with Eggs and Shrimp

Ingredients

  • 2 handfuls mixed wild herbs
  • 1 bunch arugula
  • 1 bunch Wild garlic
  • 12 pre-cooked shrimp (peeled except tail segment, deveined)
  • 4 tbsp olive oil
  • 4 hard boiled eggs (peeled)
  • 0.5 lemon (juice)
  • 2 tbsp white wine vinegar
  • sugar
  • 1 handful chervil (finely chopped)
  • Salt

Instructions

    Wash and rinse the wild herbs, arugula, and wild garlic, then pat dry and arrange in a large bowl.

    Sauté the shrimp in 1 tbsp olive oil until lightly browned, deglaze with vinegar, and transfer to a small bowl. Mix remaining oil, lemon juice, and chervil; season with salt and a touch of sugar. Let sit for about 5 minutes. Then spread over the herb salad and garnish with quartered eggs before serving.
