Wild Garlic Spinach Salad

Ingredients

  • 4 eggs
  • 200 g young spinach
  • 1 handful wild garlic
  • 100 g radishes
  • 100 g mushrooms
  • 150 g cherry tomatoes
  • 1 handful chives
  • 3 tbsp white balsamic vinegar
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • daisy flower (for garnish)

Instructions

    Boil the eggs for 8-10 minutes, cool them in cold water and let them sit. Peel and cut into strips.

    Wash and dry the spinach and wild garlic, remove thick stems. Slice radishes thinly. Clean mushrooms and slice thinly. Quarter cherry tomatoes.

    Combine spinach, wild garlic, radishes, mushrooms, and tomatoes in a large bowl. Gently fold in the egg strips. Divide salad onto plates.

    For the dressing, rinse chives, dry, and cut into rolls. Whisk white balsamic vinegar with 2 tbsp water, olive oil, and chives; season with salt and pepper. Drizzle dressing over salad and garnish with daisy flowers.
