Wild Garlic Soup

Ingredients
- 150 g wild garlic
- 700 ml vegetable broth (instant)
- 300 ml whipping cream
- 2 egg yolks
- 2 tbsp butter
- Salt
- black pepper (freshly ground)
- nutmeg
Instructions

Wash the wild garlic and cut into thin strips. In a pot melt the butter, add the wild garlic and sauté until it wilts.

Pour in the broth and bring to a boil. Whisk in the cream and egg yolks with a whisk, then stir constantly while heating until the soup starts to thicken. Do not let it boil, or the egg yolk will curdle.

Season with salt, pepper, and nutmeg, taste, and serve in bowls.
