Ingredients
- 120 g wild garlic
- 100 g Parmesan
- 400 g ricotta
- 3 egg yolks
- 120 g flour
- Salt
- Pepper (freshly ground)
- flour (for dusting)
- 60 g Butter
Instructions

Wash the wild garlic, dry and finely chop. Set aside about 2 tablespoons.

Grate half of the parmesan finely.

Combine the wild garlic with ricotta, egg yolks, flour and grated parmesan into a dough; season with salt and pepper.

Divide into four pieces and roll each on floured surface into ~2.5 cm thick logs.

Cut into ~2 cm long pieces and boil in salted water for about 5 minutes.

While gnocchi cooks, melt butter in a pan.

Remove gnocchi, drain well and quickly sauté in the brown butter.

Serve on plates sprinkled with remaining grated parmesan and leftover wild garlic.
