- 400 g Green Beans
- 3 Garlic cloves
- 2 tbsp olive oil
- 100 ml Vegetable broth
- Salt
- 250 g whole wheat penne
- 350 g cooked potatoes (from yesterday)
- 40 g Black olives
- Pepper (freshly ground)
- 60 g grated Parmesan

Wash, trim, and cut the ends of the beans; halve if desired. Peel and finely chop the garlic. Heat the oil and sauté the garlic until fragrant, then add the beans, pour in the vegetable broth, season with salt, and simmer for about 10 minutes.

Cook the pasta in plenty of boiling salted water until al dente. Peel and dice the potatoes. Drain the pasta. Add the potatoes and olives to the beans, heat through, combine with the pasta, and season with salt and pepper. Sprinkle with Parmesan before serving.
