Ingredients
- 350 g Basmati whole grain rice
- 300 g chicken breast fillet (cut into strips)
- 150 g tofu (sliced)
- 2 small zucchini (thinly sliced lengthwise)
- 50 g mushrooms (thinly sliced)
- 2 handful baby spinach
- 2 tbsp sesame oil
- light soy sauce
Instructions

Cook the Basmati rice according to package instructions.

Heat the oil in a pan and fry the chicken strips, tofu, zucchini, and mushrooms until golden brown, about 4 minutes while stirring. Add the washed baby spinach last and wilt it down. Season with soy sauce. Spread the rice on a plate and top with the chicken, tofu, zucchini and mushroom slices, and baby spinach.
