White Chocolate Truffles

- 200 ml heavy cream
- 250 g dark couverture chocolate (50% cocoa content)
- 200 g milk couverture chocolate (30% cocoa content)
- 20 ml cognac
- 100 g Soft Butter
- cocoa powder (for coating)
- white chocolate flakes (for rolling)

Heat the cream in a pot. Chop both types of couverture and place them in a bowl. Bring the cream to a boil again, pour it over the chopped chocolate, and melt gently while stirring carefully. Gradually stir in the cognac. Let the mixture cool and rest for at least 5 hours. Cut the butter into small pieces and gradually fold into the chocolate cream. Transfer to a piping bag with a large round tip and pipe equal-sized mounds or half-spheres onto parchment paper. Chill for at least 1 hour, then quickly roll each mound between your palms into a ball. First coat in cocoa powder, then roll in white chocolate flakes.
