White Chocolate Mousse

Ingredients
- 1 Vanilla bean
- 150 g white couverture chocolate
- 300 ml whipping cream
- 250 g strawberries
- 1 tsp sugar
- 1 tsp vanilla sugar
- pinch chili salt
- 0.5 tsp pink peppercorns

Slice the vanilla bean lengthwise and scrape out the seeds. Chop the chocolate into small pieces and heat it with the vanilla seeds and cream in a small saucepan, stirring until melted. Let cool, pour into a bowl, cover, and refrigerate overnight.

On the next day, wash, hull, and dice the strawberries. Mix them with sugar, vanilla sugar, and chili salt. Roughly crush the pink peppercorns and fold them in. Let sit for about 30 minutes to allow flavors to meld.

Whisk the chilled chocolate mixture into a mousse using an electric hand mixer until light and airy. Spoon the mousse into glasses, top with the strawberry mixture, and serve immediately.
