Ingredients

  • 275 g flour
  • 250 ml dry white wine
  • 4 tbsp soy oil
  • 2 Eggs
  • Pinch Salt
  • oil for frying
  • 4 small pears
  • powdered sugar for dusting
  • vanilla ice cream for serving

    Sift the flour and whisk it with the wine and soy oil until thick. Separate the eggs; beat the yolks into the batter. Whisk the egg whites with a pinch of salt to stiff peaks, then fold them into the mixture.

    Heat oil in a deep pan for frying. Peel the pears (leave the stem attached if possible), pat dry, dust with powdered sugar, coat each pear in the batter, and fry in hot oil until golden brown. Remove with a slotted spoon and drain on paper towels. Serve in bowls with vanilla ice cream.
