White Chocolate Cream with Red Wine Sauce

Ingredients
- 125 g sugar
- 4 egg yolks
- 125 g white couverture chocolate
- 250 ml Whipping Cream
- 250 ml red wine
- 150 ml port wine
- 1 tsp Cornstarch
- white chocolate shavings (for garnish)

Simmer 75 g of sugar with 75 ml water for about 10 minutes, stirring occasionally. Set aside to cool. Whisk the egg yolks over a hot water bath until creamy. Chop the chocolate and melt it into the egg mixture. Stir over a cold water bath. Beat the cream stiff and fold in. Pour into molds and freeze for at least 4 hours.

For the sauce, reduce the remaining sugar with red wine and port wine by about half. Whisk cornstarch into 1–2 tbsp cold water and use to lightly thicken the sauce, then let it cool.

Remove the parfaits from the molds, pour the sauce over them, and garnish with chocolate shavings before serving.
