Ingredients

  • 4 egg yolks
  • 50 g powdered sugar
  • 200 g dark chocolate
  • 1 tbsp cocoa powder
  • a pinch of salt
  • 0.5 tsp cinnamon
  • 500 g whipping cream
  • 50 g liquid whipping cream (for serving)
  • 1 tbsp toasted almond slivers (for garnish)
  • 1 tbsp fresh raspberries
  • 1 tsp powdered sugar (for dusting)

Instructions

    Melt the chocolate in a double boiler and let it cool. Whisk the egg yolks with powdered sugar and salt until frothy, then fold in cinnamon, cocoa powder, and melted chocolate. Beat the cream to stiff peaks and gently fold into the mixture. Pour the batter into a small rectangular dish, smooth the top, cover with plastic wrap, and chill in the freezer until firm.

    Remove from the dish (briefly dip the dish in hot water and loosen the edges with a knife), then garnish with liquid cream, toasted almond slivers, and raspberries. Dust with powdered sugar before serving.
