Ingredients
- 1 Ciabatta (ca. 300 g)
- 6 tbsp Olive oil
- 1 handful baby spinach
- 250 g Salmon fillet
- 1 tbsp Lemon Juice
- Salt
- Pepper (freshly ground)
- 1 small red onion
- 2 Tbsp capers (jar)

Cut the ciabatta into cubes about 5 cm on each side. Heat 3-4 tbsp oil in a hot pan and fry the bread cubes until golden brown and crisp all around. Remove and drain on kitchen paper. Wash, rinse and shake dry the spinach.

Rinse the salmon fillet, pat dry, drizzle with lemon juice, salt and pepper. In the remaining hot oil cook over medium heat for about 5 minutes while turning, then remove and let cool slightly before flaking into pieces with a fork. Peel the onion, quarter it and slice thinly into strips.
