White Bread

Ingredients
- 400 g wheat flour type 1050
- 100 g finely ground rye flour (type 1150)
- Salt
- 2 tbsp olive oil
- 1 cube yeast (42 g)
- 2 tbsp dried thyme

Sift both flours into a bowl and sprinkle ½ tsp salt on top. Add 1 tbsp oil. Dissolve the yeast in 300 ml lukewarm water until smooth. Gradually stir the mixture into the flour, kneading everything together. Let the dough rise covered in a warm place for 45 minutes.

Line a baking sheet with parchment paper and sprinkle 1 tbsp thyme in the center. Knead the dough again, shape it into a thick oval loaf, and place it on the baking sheet. Mix the remaining olive oil, 1 tbsp thyme, and a pinch of salt; brush this generously over the loaf.

Let the loaf rise for 30 minutes. After 20 minutes, preheat the oven to 200°C. Bake in the oven for 45 minutes. Fifteen minutes into baking, reduce the temperature to 180°C.
