Ingredients

  • 30 g yeast
  • 125 ml lukewarm milk
  • 500 g flour
  • 1 egg yolk
  • 125 g soft margarine (or butter)
  • 100 g sugar
  • 1 packet vanilla sugar
  • 1 pinch salt
  • zest of 1 untreated lemon

Instructions

    Crush the yeast finely and stir it into half of the lukewarm milk until smooth. Knead the yeast mixture with three‑quarters of the sifted flour, the remaining milk, the egg yolk and the soft fat. Work the dough vigorously and shape it into a ball. Do not add sugar or spices yet. Place the dough ball in a deep pot or large bowl filled with plenty of cold water. Wait until the dough lifts off the bottom and floats on the surface; this may take up to an hour.

    Remove the yeast dough from the water and let it drain. Knead in the sugar, vanilla sugar, salt, lemon zest and the remaining flour. Roll out the dough, shape it, and place it in a cold oven without allowing it to rise. The yeast will ferment during the preheating of the oven.
