White Beans with Tomato Sauce

White beans with tomato sauce from Spoonsparrow are inspired by Greek cuisine. Try this tasty, vegan dish yourself.

Ingredients

  • 250 g dried white beans (e.g., Cannellini)
  • 8 tomatoes
  • 2 onions
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 1 tbsp Tomato Paste
  • 500 ml vegetable broth
  • 2 tbsp freshly chopped parsley
  • a pinch of brown sugar
  • a splash of lemon juice
  • Salt
  • Cayenne pepper

Instructions

    Soak beans for at least 12 hours (best overnight) in cold water.

    Drain and let them dry. Boil tomatoes briefly, cool, peel, quarter, seed, and chop into pieces. Peel onions and garlic and dice finely.

    Heat oil in a pan and sauté onion with garlic until translucent. Stir in tomato paste and splash some vegetable broth. Add tomatoes and beans, pour in more broth. Simmer gently for about 45 minutes, stirring occasionally; add more broth if needed.

    Finally stir in parsley and season with sugar, lemon juice, salt, and cayenne pepper.
